Mayor Dietz to read and present the proclamation to the Elk River High School culinary team.
Background/Discussion
The 2017 Elk River culinary team won their eighth Minnesota ProStart Invitational title in the culinary
competition and as state champions, qualified for the National ProStart Invitational in Charleston, South
Carolina. They placed seventh among 50 of the nation’s top culinary programs.
Mayor Dietz is requesting the Council recognize May 16, 2017, as Elk River High School Culinary Team
Championship Day.

Culinary Program Day in the City of Elk River
WHEREAS, the Hospitality Minnesota Education Foundation and Sysco Minnesota sponsor the
Minnesota ProStart Invitational, the State Tournament for high school culinary teams; and
WHEREAS, ProStart educational curriculum combines classroom instruction with mentored work
experience to teach students management and culinary skills for careers in the restaurant and food
service industry; and
WHEREAS, Culinary teams develop a unique menu for a three-course meal, complete with recipes
and food costs, and prepare that meal in 60 minutes using two butane burners—with no electricity
or running water; and
WHEREAS, they are evaluated on their menu, degree of difficulty, food safety and sanitation,
knife skills, cooking procedures, food costing, teamwork, taste, and presentation of their meal; and
WHEREAS, Elk River High School has a proud tradition of exceptional culinary teams under the
leadership of Ms. Monique Sabby and mentorship of chef Seth Bixby Daugherty; and
WHEREAS, the 2017 Elks culinary team won their eighth Minnesota ProStart Invitational title in
the culinary competition; and
WHEREAS, as state champions, the culinary team qualified for the National ProStart Invitational
in Charleston, South Carolina, where they placed seventh among 50 of the nation’s top culinary
programs; and
WHEREAS, the Elks are not only chefs but outstanding students as well; and
WHEREAS, the Elks brought tremendous community pride and created a positive image for the
City of Elk River.
NOW, THEREFORE, BE IT RESOLVED, that I, John J. Dietz, Mayor of Elk River, hereby
proclaim Tuesday, May 16, 2017, as Elk River High School Culinary Program Day in the City of Elk
River.
