Introduction
Chipotle Mexican Grill is requesting an On-sale and Sunday liquor license. They are a quick service
Mexican restaurant with over 100 restaurants in ten states.
Discussion
Chipotle will be leasing space from the Carson Business Park (18201 Carson Street), which is located at
the intersection of TH 169 and Main Street. Background investigation checks have been completed and
approved by the Police Department. All application materials and fees have been submitted with the
exception of a copy of their food license. The attorney for the applicant stated they wouldn't receive the
food license until about a week prior to the opening. Chipotle expects to open around March 15.

· Grant or deny the On-sale and Sunday liquor license to Chipotle Mexican Grill of Colorado, LLC.
· If granted the following conditions are recommended before the licenses will be valid:
1. A copy of the food license must be submitted to the city.
2. The licenses will become effective upon approval of the State Public Safety Liquor
Control Division and remain in effect until June 30, 2007.
